Recipe - Grilled Vegetables
Prepare sweet potatoes (sliced), tofu (sliced and marinated in soy souse, zucchini (halved), and asparagus
Get your grill (outdoors or stove-top) nice and hot
Drizzle it with olive oil
Place your veggies on the grill and grill until you like them. As you can see below, I like my grilled vegetables a bit crispy. The carmalization adds a delicious sweetness while the ‘burnt bits’ add texture.
Just before you take the veggies and tofu off of the grill, sprinkle with salt and pepper.
I live in Florida so I can grill any time. If it is too cold where you live, then roast them.
Roasting…
First place all the veggies on a roasting tray, drizzle with olive oil, sprinkle with salt, pepper, and your favorite spices. (Don’t think too much about it. Let your intuition guide you.) Place the tray in a 375 degree oven and let the veggies, olive oil, spices, and heat do its magic. Wait about 15-18 minutes then turn them over and let roast for another 15 minutes.
Note: The time isn’t exact. I usually cook mine longer because I like a heavy roast on my vegetable so they are a bit crispy. I like the different texture. What do you like? Experience and let me know!
