A BOLD Salad

I always get asked… What do you eat? or How can you stand eating salads all the time? To which I reply that I don’t really like salads. I like warm and hearty foods. (It has to do with my Ayurveda dosa type. More about this later.)

Even though I don’t love salads... I really love this one. It is easy to make because I buy most everything at Trader Joe’s and it’s already cut up and ready to go so the prep time is minimal. It’s perfect for a fresh, bright meal at the end of the day or an energizing tangy meal mid-day.

I like to call this my Nutrition-Packed Bold Salad.

Lupini beans are my new obsession. They are nutty, sweet and oh-so crunchy. Plus, just a 1/2 cup has 13 grams of protein and a ton of fiber!

What makes this salad visually beautiful is the caulilini which I didn’t even know existed before I saw it at Trader Joe’s and all the beautiful fresh vegetables glistening from a simple vinaigrette.

THE RECIPE

  • Shaved brussels sprouts

  • Celery cut on an angle

  • Green peppers

  • Italian flat-leaf parsley

  • My new obsessions

    • Caulilini

    • Lupini beans

Enjoy slicing your vegetables, then mix it all the ingredients together and toss with the vinaigrette.

You are in charge of your nutritional lifestyle so the amounts of each ingredient is up to you. If you want more protein, add more lupine beans. If vitamin C is on your list of needed nutrition, then add more green peppers and brussels sprouts - they are the best for your immunity system. More fiber, add more lupine beans and brussels sprouts. More calcium or potassium, add more caulilini.

THE VINAIGRETTE

  • 1/4 cup fresh lemon juice

  • 1/4 cup extra virgin olive oil

  • A smidge of mustard

  • Roasted garlic (for a smoky flavor) or fresh minced garlic

  • Salt and Pepper

I like to add my vinaigrette, then let the salad sit for a bit so the brussels sprouts wilt a little.

Then enjoy the BOLD salad that is so packed with flavor and nutrition. I can always feel energy of the vegetables radiate out in my body when I eat this salad.

  • Thank the vegetables for their nutrition while washing them

  • Take time to do breath work while slicing

  • Get your creativity going while assembling the salad

  • Get energized while making the vinaigrette and shaking it so its nicely mixed
